I am terribly sad that summer appears to be over. However, looking on the plus side I am already hankering after the wonderfully comforting food of the colder months. This is a lighter version of a beef stew that is surprisingly only 225 cals per serving. A few more calories but oh so delish served with mounds of buttery mash, polenta or rice…

Now that we are officially in Autumn and facing more difficult times with the pandemic, treat yourself to some warming comfort food… you only need half an hour and a few ingredients before this casserole is on the table…

Ingredients

  • 1 onion, sliced

  • 1 garlic clove sliced

  • 2 tbsp olive oil

  • 300g pack beef stir-fry strips, or use beef steak, thinly sliced

  • 1 yellow pepper, deseeded and thinly sliced

  • 400g can chopped tomatoes

  • Sprig rosemary, chopped

  • Handful pitted black olives

Directions

  • In a large saucepan, cook the onion and garlic in olive oil for 5 mins until softened and turning golden. Tip in the beef strips, pepper, tomatoes and rosemary, then bring to the boil. Simmer for 15 mins until the meat is cooked through, adding some boiling water if needed. Stir through the olives and serve with mash or polenta.
