I went to a dinner party on Saturday in Devon and one of my brother and sister-in-laws neighbours had been out with her husband and two small boys gathering blackberries from the hedges in the pouring rain. Despite the conditions they collected enough to make this delicious Bramble (Blackberry) Mousse which was devoured as it was so good. I understand it is a recipe from Yorkshire!
Bramble Mousse
Ingredients:
1lb brambles
3 tbsp caster sugar
3 eggs
3oz caster sugar
1/2oz gelatine (I used 4 leaves for each batch)
Juice of 1/2 lemon
2tbs water
1/4 pt double cream
Method:
Soften the brambles in a saucepan with the caster sugar & then sieve.
Whisk eggs & sugar together until thick.
Soak gelatine in lemon juice & water & warm over a gentle heat.
Lightly whip the cream.
To the egg mixture add 8 fl.oz of the bramble juice, then gelatine & finally the cream.
Chill until needed. Just before serving pour the remaining puree over the mouse.
