Bramble Mousse

I went to a dinner party on Saturday in Devon and one of my brother and sister-in-laws neighbours had been out with her husband and two small boys gathering blackberries from the hedges in the pouring rain. Despite the conditions they collected enough to make this delicious Bramble (Blackberry) Mousse which was devoured as it was so good. I understand it is a recipe from Yorkshire!Bramble Mousse

Bramble Mousse

Ingredients:

1lb brambles

3 tbsp caster sugar

3 eggs

3oz caster sugar

1/2oz gelatine (I used 4 leaves for each batch)

Juice of 1/2 lemon

2tbs water

1/4 pt double cream

Method:

Soften the brambles in a saucepan with the caster sugar & then sieve.

Whisk eggs & sugar together until thick.

Soak gelatine in lemon juice & water & warm over a gentle heat.

Lightly whip the cream.

To the egg mixture add 8 fl.oz of the bramble juice, then gelatine & finally the cream.

Chill until needed. Just before serving pour the remaining puree over the mouse.

Enjoy!

It was so good to see every last spoonful eaten with such relish! That, coupled with the delicious memory of my three year old saying “I’m a little bit bored and a little bit wet” made for a memorable, if rainy, Saturday in Devon! Lovely to see you. x
