BUTTER BEAN MASH

BUTTER BEAN MASHThis is so simple and quite delicious.

If you are not a vegetarian, plonk a grilled chop or fillet of fish on top, serve with a green vegetable or salad leaves and you have a moreish meal.

BUTTER BEAN MASH

INGREDIENTS  serves 4

Drizzle olive oil

2 shallots, finely chopped

Large clove garlic crushed

2 x 400g tins butter beans, drained & rinsed

Juice half lemon

100ml fat free Greek yoghurt

 

METHOD

Gently fry shallots and garlic in a medium size frying pan for 4 mins or until softened but not caramelised.

Add the beans, lemon and yoghurt, bring to the boil and simmer for 3 minutes. Season well. Mash the beans until reasonably smooth.
