Cheesy Bacon And Egg MuffinsCourse: BreakfastDifficulty: Easy
No explanation required about why you would want to cook or eat these! Except to say that these warm fluffy muffins are fantastic served with an espresso when you have a girlfriend over for coffee… take note girlfriends! Recipe by Karen Burns-Booth.
12 slices of bacon or ham
8 large eggs, beaten with salt & pepper
3 tbsp milk
1 tbsp chopped chives
125g grated cheddar
- Preheat the oven to 180°C/gas mark 4. Grease a 12 hole muffin tray with butter.
- Line the muffin tins with the bacon. Add the milk, chives and ¾ of the grated cheese to the beaten eggs and mix well in a measuring jug. Pour the mixture into the bacon cups. Sprinkle the rest of the grated cheese over the top.
- Bake for 25 to 30 minutes, or until the bacon is crisp and the filling has puffed up and is golden brown and they look so delicious you cannot wait to sink your teeth into one (or two).
