Cheesy Polenta With Sausage Ragout

Ingredients serves 4

  • Tbsp vegetable or olive oil
  • Onion, red, chopped
  • Garlic cloves, 2 finely sliced
  • 6- 8 good quality sausages, skins removed
  • 400g tin of chopped tomatoes
  • 200ml chicken or vegetable stock
  • Tbsp tomato puree
  • 4 large sprigs rosemary, leaves chopped
  • 200g instant polenta
  • 200g Parmesan or very strong cheddar, grated
  • Large knob butter

How to prepare

Heat the oil in a large high sided frying pan (or casserole dish) and cook the onion and garlic for two minutes or so to soften. Add the sausage meat, breaking it up into small pieces and cook for 5 minutes. Stir in the chopped tomatoes, stock, puree and the rosemary. Bring to a simmer and cook gently for 20 – 30 mins. Add salt and pepper to taste.

Make up the polenta according to the pack instructions. It goes thick pretty quickly so keep stirring. Remove from the heat and stir in the cheese and the butter. Season to taste.

Divide the polenta between four plates or bowls, then spoon on the ragout.
