GINGER BEEF

Quick and easy supper dish from Simon Cowell’s new cook-book! (not written by him but he launched the campaign on TV to find the 100 best British home recipes & this is one of them).

INGREDIENTS: serves 4

4 tbsp olive oil

250g fillet steak cut into pieces

1 red pepper, cut into strips

5 cm piece of ginger, thinly sliced

i med hot chilli, halved, de-seeded and sliced thinly

zest of 1 orange

juice of 1.5 oranges

3 tbsp dark brown sugar

2 – 4 tbsp soy sauce

1 bunch spring onions thinly sliced

METHOD:

Heat oil in wok, and cook the steak for two minutes. Add the pepper and cook for two minutes more. Add the ginger, chilli, orange zest and juice, sugar and soy sauce and cook for one minute. Set aside. Stir-fry the spring onions in the hot wok for 20 seconds then sprinkle on the beef and serve with rice.
