Ingredients serves 2
2 Italian style sausages skins removed
Oil
Onion, chopped
Garlic clove, chopped
Half tsp fennel seeds
Pinch chilli flakes
400g tin cherry tomatoes
300ml stock (optional)
400g tin borlotti beans, drained and rinsed
100g green beans, trimmed
Parmesan

How to prepare
Roll the sausagemeat into little balls. Heat a non stick frying pan, brushed with a little oil, and brown the meatballs until golden. Remove and keep warm.
Add the onion, garlic and fennel seeds to the pan, along with the chilli flakes and salt and pepper. Cook for 5 minutes and then add the cherry tomatoes with 300ml stock or water. Bring to a simmer and add the beans and meatballs.
Cook for 10 minutes and then add the green beans. Cook for another 5 mins until beans are just tender, then serve with lashings of grated Parmesan.
