Jennifer Aniston is meant to have loved this salad hence the name. However, I can tell you that this is one of my family’s favourite salads. It is so easy to make. And I have made it with Couscous instead of Bulgur wheat.

Ingredients

  • 200g bulgur wheat

  • 200g feta

  • 1 tin chickpeas

  • 1 small red onion

  • ½ cucumber

  • handful pistachios

  • handful fresh mint

  • handful fresh parsley

  • squeeze lemon juice

  • salt and pepper

Directions

  • Cook bulgur wheat in a saucepan of water for 15 minutes until the granules absorb all the liquid.
  • Chop all the other ingredients and mix everything together in a bowl.

Cook’s Tip

  • I add Pomegranate seeds if I have them, sunflower seeds or anything that would enhance this salad and needs eating up.
