Protein refuel pancakes

I like to do my exercise early in the morning and then have a big post-workout carbohydrate refuel meal which will keep me going for the morning. These protein refuel pancakes are quite heavy but delicious flavoured with cinnamon and served with Greek yoghurt and berries and certainly do the trick if I am off out for the morning. I then just pack a few nuts in my bag for a mid-morning snack. It keeps me away from the biscuit tin!

Protein refuel pancakes with cinnamon

Ingredients: serves 1
100g banana
20g protein powder
1 egg
2 egg whites
35g rolled oats
1 tsp cinnamon
10g coconut oil
55g 0% fat Greek yoghurt
35g berries, such as raspberries, blueberries or blackberries

How to prepare:
Whizz up the banana, protein powder, egg, egg whites, oats and cinnamon in a blender to make a batter.
Heat up half the coconut oil in a non-stick frying pan over a medium heat. Pour little puddles of the batter into the pan. Cook for about 1 minute on each side. Remove and repeat the process with the rest of the oil and batter.
Serve with a dollop of yoghurt and a few berries.
