Sally’s Substantial Salad

The reason I call this recipe (or, more accurately, a good combo of gorgeous ingredients) is that Sally’s substantial salad is just that. Not a few green salad leaves tossed in French dressing (although that can be just the job sometimes) – no, this is more filling. I had it with cold roast chicken for my lunch today and it was filling, healthy and fresh. Perhaps I should have nicknamed it Sally’s Satisfying Salad? In truth, you can put anything you like in the mix, but these particular ingredients worked very well indeed, so here they are in case you fancy making it:

 Sally’s Substantial Salad

Ingredients
Toasted flaked almonds
Red & White quinoa (Merchant Gourmet vacuum pack)
Green grapes
Soya beans (defrosted from frozen)
Parsley
Sweet red pepper
Cucumber
Avocado
Dressing: Drizzle olive oil and the zest/juice of two fresh limes over salad and add lots of freshly ground black pepper.

How to prepare
Simply chop everything up and combine in a large bowl. Pour over the dressing and serve.
