I know I made these, Santa Chocolate Brownie hats, last Christmas but the old ones are always the best (so they say) and these were so popular that I thought I would remind you of them again! You need to make your chocolate brownies first or as I did make a chocolate sponge tray bake.
110g unsalted butter, room temp
225g mascarpone cheese, room temp
500g icing sugar
2 tsp vanilla extract
pinch of salt
brownies – cut into small circles
- For the base make a tray of chocolate brownies and cut out circles with a very small pastry cutter.
- Using a free standing mixer with a paddle attachment, beat butter with mascarpone cheese until light and creamy, about 2 mins. Add vanilla extract and salt. Add sugar slowly continue beating until smooth. Add more sugar, if needed to reach desired consistency and sweetness.
- Using an icing bag, pipe a circle of cream around the edge. Hull a strawberry and pop it in the middle and squeeze a bobble of icing on the top.
