I know I made these, Santa Chocolate Brownie hats, last Christmas but the old ones are always the best (so they say) and these were so popular that I thought I would remind you of them again! You need to make your chocolate brownies first or as I did make a chocolate sponge tray bake.

Ingredients

  • 110g unsalted butter, room temp

  • 225g mascarpone cheese, room temp

  • 500g icing sugar

  • 2 tsp vanilla extract

  • pinch of salt

  • strawberries

  • brownies – cut into small circles

Directions

  • For the base make a tray of chocolate brownies and cut out circles with a very small pastry cutter.
  • Using a free standing mixer with a paddle attachment, beat butter with mascarpone cheese until light and creamy, about 2 mins. Add vanilla extract and salt. Add sugar slowly continue beating until smooth. Add more sugar, if needed to reach desired consistency and sweetness.
  • Using an icing bag, pipe a circle of cream around the edge. Hull a strawberry and pop it in the middle and squeeze a bobble of icing on the top.
