White Chocolate And Strawberry Traybake: Mary Berry recipe

Grace says I am the baker in The CountryWives team and I have to admit to enjoying a slice of cake as often as I can. Not so good for the hips but great for the happiness factor! This White Chocolate and Strawberry Traybake is one of my favourites and is great to bake when you have crowds coming at the weekend, as I often do with my 4 children and friends who come to Henley to escape London! It also looks pretty when serving. It is a Mary Berry recipe so is foolproof and delicious.

White Chocolate And Strawberry Traybake

Ingredients: 
225g baking spread
225g caster sugar
275g self-raising flour
1 level tsp baking powder
4 large eggs
4 tbsp milk
1 tsp vanilla extract
½ x 7g tub freeze dried strawberries
100g white chocolate melted

For the Topping:
100g butter, softened
175g icing sugar, sifted
2 tbsp milk
½ tsp vanilla extract
½ x 7g tub freeze dried strawberries

How to prepare:

Preheat the oven to 180℃/Fan 160℃. Grease a 30cm x 23cm traybake tin and line with non-stick baking paper.

Measure all the traybake ingredients, except the strawberries and white chocolate, into a large bowl and beat with an electric mixer until light and fluffy. Stir in the strawberries and melted chocolate.

Turn the mixture into the tin and level the top. Bake in the preheated oven for 30-35 minutes, or until the cake has shrunk a little from the sides of the tin and springs back when pressed in the centre with your fingertips. Leave to cool in the tin.

To make the icing, measure the butter, icing sugar, milk and vanilla into a bowl. Whisk until pale and creamy. Spread over the traybake and sprinkle with the strawberries.

Easy peasy and just typing this recipe out makes my mouth water. White chocolate, strawberry traybake is one of our family favourites so try it and see for yourself.

I made this for my family and a second one for a charity coffee morning, it’s a perfect recipe, so easy and so delicious. I had so many compliments about how good it was and requests for more. It tastes as good as it looks, thank you for sharing it. Your online magazine is brilliant. X

can i bake this in a round tin?
