I thought I would feature in one post, our top ten favourite vegetarian recipes as so many people are cutting back on meat in their diet. My husband and I try to eat vegetarian at home and only eat meat when out in a restaurant or at friends. My housekeeping expenditure has dramatically reduced and even my ‘Meat & two veg’ husband loves all the recipes below. It has made him cut out red meat completely but chicken and fish are still part of his diet.

This Butternut Squash Autumn Pie is a Mob Kitchen recipe and was cooked for husband and I by our youngest son and his friend. It looked amazing and tasted even better.

My husband said, “Who needs meat when you have recipes like this?”.

AUBERGINE CHILLI TRAYBAKE

Aubergines are really good at taking on flavours and here they’re mixed with chilli, cumin, chickpeas and red kidney beans, then topped with more aubergines to make a delicious one-pot traybake. Finished with bubbling melted cheese, this is a hearty vegetarian dish.

This is a recipe from the Cook with Janie website which was written for a Thermomix. I have therefore adapted it for those who do not have a Thermomix but do have family and friends who like vegetarian food. These vegetarian fritters are sensational and we all love them, including the meat-eaters in our family.

HALLOUMI, MUSHROOM & SHALLOTS – A ONE POT WONDER

Fast becoming a regular treat in our house, this recipe is a great choice if you have a vegetarian to cater for. The mushrooms are quite meaty so I don’t think meat-eaters suffer! Pink peppercorns are optional but everyone who has eaten this at our house says they are a fantastic addition.

SHEPHERD’S POTATO RECIPE: A VEGETARIAN VERSION OF SHEPHERD’S PIE

This recipe for Shepherd’s Potato caught my eye as it is a vegetarian (& vegan) take on the very popular meat dish, Shepherd’s Pie.

I love a baked potato especially at this time of year. I also love mashed potato – perhaps it is my Irish heritage. Nigella Lawson once said on one of her cookery programmes that she could eat a bowl of mashed potato as a meal.

I always think this is a good time of year to go on a diet as we come into summer so eating salads and lighter foods is quite normal. A salad on a cold January day is not so appealing. To give your body a kickstart try this Cleansing Green Soup. I have a friend who cooks it every Monday and so starts the week with a cleanse! It is bursting with vitamins, minerals, fibre and plant protein so it really will make you feel awesome. It is great served with some sliced avocado or some brown rice.
